Catch weight lets you stock and sell an item by count while pricing and invoicing it by its actual weight. It's for products where no two units weigh exactly the same.

A case of chicken breasts might be listed at 40 lb, but the case on the scale weighs 38.6 lb. A wheel of cheese, a side of beef, or a box of salmon fillets works the same way. The customer orders one case, but they pay for the weight they actually receive.
